< Previous18double awesome chinese foodGINGER SCALLION OIL———— V, VV, GF, DF ————You may recognize ginger scallion oil, or GSO as we affectionately call it, as the magical Chinese restaurant concoction that makes just about everything taste better. Chicken, noodles, and rice are classic companions, but less typical Chinese ingredients can also be upgraded with a spoonful or five (try mixing some into ricotta cheese for one of our go-to dips). Back in the day, we’d heat oil by the gallon and, clad in protective goggles and oven mitts, trudge outside to pour it over the aromatics and watch steam and sparks shoot five feet into the air. Thankfully, this smaller-scale stovetop method is less likely to singe your eyebrows off. Makes ¾ cup½ cup neutral oil (105 g), such as grapeseed or peanut 1 bunch scallions, minced (about 1¼ cups/65 g)¼ cup (40 g) finely minced fresh gingerKosher saltHeat the oil in a large pot over high heat until it begins to smoke (about 395°F/200°C). Standing back, quickly add the scallions and ginger. Remove from heat and stir to coat all the ginger, and scallion bits. Salt to taste. Let cool completely, store in a sealed container in the refrigerator, and spoon onto anything from scrambled eggs to avocado toast. It will keep for 1 to 2 weeks, although mine never lasts that long. PEANUT SAUCE———— V, VV, GFO, DF ————I could eat this sauce on noodles, salads, grilled meats, or roasted veggies every day. Consider adding sriracha, minced garlic or ginger, swapping the vinegar for lime juice, or customizing as you see fit. Makes ½ cup3 tablespoons (45 g) unsweetened, creamy peanut butter 2 tablespoons (30 g) soy sauce (substitute tamari if gluten-free)1½ tablespoons (22 g) rice vinegar1 tablespoon (15 g) water1 teaspoon (4 g) toasted sesame oil Put all the ingredients in a small bowl and whisk to combine. Taste and adjust the seasonings, keeping in mind the sauce will vary according to your brands of peanut butter and soy sauce. Tinker with the amounts to achieve your preferred flavor and consistency. Store in an airtight container in the refrigerator for up to 2 weeks.
